I love cooking, but sometimes I feel like I don't have the time to make a nice hearty breakfast. I'm a huge believer in keeping it simple, in both food and fitness. Here's a quick, clean, simple breakfast recipe I've been making for the last week. It is so satisfying!
First, I drop a little olive oil in the pan and add some garlic, onions (if you have any) and veggies of your choice. I love using this broccoli slaw for cooking. Bell peppers would also be a good addition to this too!
Then, I mix in the spinach. Keep an eye on it, as the spinach cooks pretty quickly!
Once the spinach cooks to your liking, you can add in the eggs. I usually use between 2-3 eggs depending on who's eating! If you like your eggs more "veggie flavored", add less eggs in the eggs to veggie ratio.
Lastly, scramble together! Super easy, right? If you have any seasoning you'd like to add, you can scramble it in.
Here's the Recipe:
Feeds 1-2 people
Cook time: ~10 minutes
1 tbs of olive oil (or fat/oil of your choice)
2 cloves of garlic- minced
1/4 onion diced (optional)
1/2 cup of broccoli slaw
1/4 onion, diced
1 handful of spinach
4-5 cherry tomatoes
Salt & Pepper to your liking
Add olive oil to pan on medium heat
Add minced garlic & broccoli slaw - cook for approx. 3-5 minutes or until tender
Add spinach until cooked to your liking- approx. 1-2 minutes *keep an eye on it so it doesn't get too wilted!
Add eggs and scramble until cooked
Add toppings & enjoy!
